Chicken Fried Steak With Cream Gravy

Ingredients

  • 1 round steak, cut 1/2 inch thick (about 1 lb.)
  • 2 lg. Large eggs
  • 2 tbsp. lowfat milk
  • 1/4 c. all-purpose flour
  • Salt and freshly grnd black pepper to taste
  • 2 tbsp. butter
  • Cream Gravy (recipe below)

Directions

  1. Cut steak crosswise into 4 pcs. Place one piece between two sheets of plastic wrap. Using rolling pin or possibly meat lb., lb. to 1/4 inch thickness. Repeat with remaining pcs. In pie plate, beat Large eggs with lowfat milk; in second pie plate, combine flour, salt, and pepper. Dip each piece of steak first into egg mix, then into flour mix to coat completely. Shake gently to remove excess flour. In 12 inch skillet over medium heat, heat butter. Add in steaks, two at a time. Cook about 5 min on each side till golden brown. Serve with Cream Gravy. Makes 4 servings.

  3. Cream Gravy: In small saucepan over medium low heat, heat 2 Tbsp. butter. Stir in 2 Tbsp. all-purpose flour till blended and smooth. Gradually add in 1 c. lowfat milk, 1/2 tsp. instant chicken flavor bouillon, and 1/2 tsp. freshly grnd black pepper; bring to boil, stirring constantly. Reduce heat to low; cook 3 to 5 min, stirring frequently till mix is smooth and slightly thickened. Makes about 1 c..
