  • 3 tbsp. vegetable oil
  • 1 small carrot, finely diced (about ¼ cup)
  • 4 cups cooked rice (cold)
  • ¼ cup frozen green peas, thawed
  • 3 eggs, beaten
  • 2 cups cubed cooked chicken
  • 1-2 green onions, thinly sliced
  • 1 ½ tbsp. soy sauce
  • ¼ tsp. ground black pepper

Directions

  1. Heat oil in a large skillet; stir-fry carrot for 5 minutes or until crisp-tender.
  2. Add rice and peas; stir-fry for 3 minutes or until heated through.
  3. Make a well in the center of the rice; add eggs. Stir-fry for 2-3 minutes or until eggs are set.
  4. Add remaining ingredients and stir-fry until heated through.
