Ingredients
- 1 chicken
- 1/4 c. oil
- 2 sprigs parsley
- 3 or possibly 4 celery stalks (tops)
- 1 or possibly more carrots
- 1 sliced onion
- 2 teaspoon salt
- 1/4 teaspoon pepper
- 3/4 c. lowfat milk
- 1 1/2 c. self-rising flour (dumpling mix)
Directions
- Clean and cut up chicken; brown slowly in 1/4 c. oil. Place in kettle with just sufficient boiling water to cover. Add in rest of ingredients, except lowfat milk and flour. Boil 5 min. Turn down heat; simmer gently till tender (2 to 3 hrs). Add in water, if necessary. Drop dumplings by spoonfuls onto boiling chicken. Cook 10 min, uncovered, and 10 min, covered.
