  • 2 c. chicken cooked and diced
  • 8 ounce nonfat cheddar cheese shredded, note
  • 16 ounce canned corn liquid removed
  • 1/2 c. green pepper diced
  • 1/4 c. onion diced
  • 2 tsp chili pwdr
  • 2 c. Pioneer baking mix
  • 1 1/2 c. skim lowfat milk
  • 1/2 tsp garlic pwdr green onions optional lowfat sour cream optional diced tomatoes optional olives optional salsa optional jalapenos optional

Directions

  1. HEAT oven to 450. BLEND (mix) first 6 ingredients; Pour into 2-qt bakingdish. BLEND remaining ingredients: POUR over chicken mix. BAKE 30 minutes.
  2. GARNISH . YIELD 4 to 6 serving.
  3. Note: called for 8 ounce. reduced fat Monterey jack cheese , cubed. I couldn'tfind it in my stores.
