Directions

  1. Peel eggplant and cut into slices. Place in ice cool water while preparing recipe. Slice chicken into strips, brown in extra virgin olive oil. Set aside.
  2. Brown onion and green pepper till tender. Add in machine and eggplant. Add in chicken, tomatoes, tomato sauce and paste (with a little water). Add in seasonings (as desired). Simmer 2 hrs. Serve over spaghetti.
