Ingredients

  • 4 chicken quarters, thighs
  • 1/4 c. extra virgin olive oil
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon garlic pwdr
  • 1 sm. Spanish onion, minced
  • 1/2 c. finely minced green pepper
  • 2 teaspoon dry parsley
  • 2 fresh tomatoes, minced

Directions

  1. Rinse chicken; pat dry with paper towel. Cut 4 (10 inch) squares of foil. Pour 1 Tbsp. oil on each sheet of foil; spread to cover fat. Place chicken on foil squares. Sprinkle with salt, pepper and garlic pwdr.
  2. Combine onion, green pepper, parsley and tomatoes; toss. Spoon vegetable mix proportionately over chicken quarters. Fold and seal foil. Place foil packs on cookie sheet; bake at 425 degrees for 45 min. Serve chicken from foil packets. Be careful when opening packets. Steam is trapped inside.
