Chicken & Cashew in Soy Recipe

This is a Chinese dish that is easy and quick to make. I ate this dish at a Chinese restaurant and since I loved it very much, I tried to re-create it to my liking.

Ingredients

  • About 250g of chicken breast - cut into small pieces
  • 3 dried red chilis - cut into 2
  • 1/2 onion - cut into two (peel the onions - like shells)
  • 2-3 inch ginger - sliced with skin on
  • 12 cashew nuts
  • Sweet Soy Sauce - according to taste & gravy
  • Salt & a pinch of sugar to taste

Directions

  1. Marinade the chicken pieces with salt, turmeric and chili powder.
  2. Fry the chicken pieces till golden for 3-4 minutes and set aside.
  3. In the same pan, fry the cashew nuts and set aside.
  4. Stir fry the rest of the ingredients and add back the chicken and cashew nuts and add the soy sauce and some water. Let all the ingredients blend well together.
  5. Then add the salt and little sugar to taste.
