Directions

  1. Cut chicken breasts in half and lb. lightly. Mix flour, salt and pepper.
  2. Dredge chicken into seasoned flour. Heat extra virgin olive oil and butter, add in chicken and saute/fry quickly to a golden. Place chicken in a buttered baking dish and layer with prosciutto and cheese slices. Sprinkle grated cheese and chicken stock over all. Bake uncovered for ten min till cheese is melted and lightly browned.
