Ingredients
- 12oz penne pasta, dry
- 1/4lb bacon (4 slices,) chopped
- 1lb chicken breasts, chopped
- salt and pepper
- 1 can quartered artichoke hearts, drained and chopped
- 1/4 cup julienned sun-dried tomatoes
- 5oz fresh spinach
- For the Creamy Garlic Sauce:
- 2 Tablespoons extra virgin olive oil
- 2 Tablespoons butter
- 4 cloves garlic, minced
- 1/4 cup flour
- 1-1/2 cups milk (I used 2%)
- 1-1/2 cups chicken broth
- salt and pepper
- 3/4 cup grated parmesan cheese
- 2 teaspoons Italian seasoning
- 1 teaspoon garlic powder

%20;%20)%3C/p%3E%3Cp%3EAfter%20the%20service%20we%20had%20a%20big%20brunch%20for%20Ben%E2%80%99s%20and%20my%20family.%20It%20was%20a%20full%20house,%20and%20a%20fun%20preview%20of%20family%20gatherings%20and%20holidays%20to%20come.%20Before%20we%20moved%20into%20our%20new%20place%20I%20was%20kind%20of%20a%20hosting%20grinch%20%E2%80%93%20there%20just%20wasn%E2%80%99t%20enough%20room%20to%20have%20more%20than%20a%20few%20people%20over.%20Now%20we%20can%20all%20spread%20out%20and%20run%20around.%20It%20is%20so%20much%20better!%3C/p%3E%3Cp%3EAwkward%20family%20photo!%3C/p%3E%3Cp%3EMy%20in-laws%20and%20Ben%E2%80%99s%20brothers%20stayed%20with%20us%20this%20weekend%20to%20celebrate%20Lincoln%E2%80%99s%20big%20day,%20so%20Saturday%20afternoon%20I%20whipped%20up%20a%20huge%20pot%20of%20Chicken,%20Bacon,%20and%20Artichoke%20Pasta%20with%20Creamy%20Garlic%20Sauce%20for%20lunch.%3C/p%3E%3Cp%3EThis%20dish%20is%20the%20pasta%20version%20of%20one%20of%20my%20favorite%20pizzas%20with%20the%20same%20name%20from%20Papa%20Murphy%E2%80%99s%20(take%20%E2%80%98n%E2%80%99%20bake,%20baby!)%20and%20it%20feeds%20a%20crowd.%20Chicken,%20bacon,%20artichoke%20hearts,%20sun-dried%20tomatoes,%20and%20spinach%20are%20tossed%20with%20chewy%20pasta%20then%20smothered%20in%20a%20luscious%20creamy%20garlic%20and%20herb%20sauce.%20I%E2%80%99d%20say%20the%20taste%20is%20nearly%20identical!!%3C/p%3E%3Cp%3EStart%20by%20cooking%2012oz%20penne%20pasta%20in%20salted%20boiling%20water%20until%20al%20dente,%20then%20drain%20and%20set%20aside.%20Easy.%3C/p%3E%3Cp%3ENext,%20cook%201/4lb%20chopped%20bacon%20(4%20slices,%20y%E2%80%99all)%20in%20a%20large%20skillet%20over%20medium%20heat%20until%20crisp,%20then%20remove%20to%20a%20paper%20towel-lined%20plate%20to%20drain.%20Remove%20all%20but%201%20teaspoon%20bacon%20grease%20from%20the%20skillet.%20Don%E2%80%99t%20forget%20to%20use%20my%20easy%20bacon%20grease%20disposal%20trick!%3C/p%3E%3Cp%3EAdd%201lb%20chopped%20chicken%20breasts%20to%20the%20skillet,%20season%20with%20salt%20and%20pepper,%20then%20cook%20until%20no%20longer%20pink.%20Then%20add%201%20can%20quartered%20artichoke%20hearts%20that%20have%20been%20drained%20and%20chopped%20up,%20and%201/4%20cup%20julienned%20sun-dried%20tomatoes.%20Cook%20until%20the%20artichokes%20are%20heated%20through,%203-4%20minutes.%3C/p%3E%3Cp%3EFinally%20add%205oz%20fresh%20spinach%20(about%20half%20a%20bag%20of%20DOLE%20spinach)%20then%20toss%20with%20tongs%20until%20wilted,%201-2%20minutes.%3C/p%3E%3Cp%3EOh%20yum!%3C/p%3E%3Cp%3EK!%20Now,%20you%20can%20cook%20the%20chicken/artichoke%20mixture%20first%20then%20make%20the%20creamy%20garlic%20sauce%20second,%20or%20if%20you%E2%80%99re%20confident%20enough,%20you%20can%20do%20them%20both%20at%20the%20same%20time.%20You%20can%20do%20eeet!%3C/p%3E%3Cp%3EIn%20a%20skillet%20or%20saucepan,%20melt%202%20Tablespoons%20butter%20in%202%20Tablespoons%20extra%20virgin%20olive%20oil%20over%20medium%20heat,%20then%20add%204%20cloves%20minced%20garlic%20and%20saute%20for%2030%20seconds.%20This%20may%20seem%20like%20a%20lot%20of%20fat,%20but%20remember,%20this%20recipe%20makes%20a%20TON%20of%20food.%3C/p%3E%3Cp%3ENext%20sprinkle%20in%201/4%20cup%20flour%20and%20whisk%20until%20smooth,%20then%20slowly%20stream%20in%201-1/2%20cups%20each%20milk%20and%20chicken%20broth%20while%20whisking%20constantly%20to%20avoid%20lumps.%20I%20used%202%25%20milk,%20but%20you%20could%20use%20whatever%20you%E2%80%99ve%20got%20in%20the%20fridge.%3C/p%3E%3Cp%3ESeason%20the%20sauce%20with%20salt%20and%20pepper%20then%20switch%20to%20a%20wooden%20spoon%20and%20stir%20frequently%20until%20thick%20and%20bubbly,%20about%2010%20minutes.%3C/p%3E%3Cp%3ETo%20finish%20%E2%80%98er%20off,%20add%203/4%20cup%20freshly%20grated%20parmesan%20cheese,%202%20teaspoons%20Italian%20seasoning,%20and%201%20teaspoon%20garlic%20powder%20(not%20garlic%20salt.)%20Taste%20and%20adjust%20salt%20and%20pepper%20if%20necessary.%3C/p%3E%3Cp%3EGarliriffic!%3C/p%3E%3Cp%3EEverybody%20into%20the%20pool!%20That%20is%20to%20say,%20combine%20the%20cooked%20pasta%20with%20chicken%20and%20artichoke%20mixture,%20the%20garlic%20cream%20sauce,%20and%20cooked%20bacon%20(mmm,%20bacon.)%3C/p%3E%3Cp%3EToss%20to%20combine,%20then%20scoop%20&%20serve!%3C/p%3E%3Cp%3EChicken,%20Bacon%20&%20Artichoke%20Pasta%20with%20Creamy%20Garlic%20Sauce%3C/p%3E%3Cp%3EServes%206%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3ECook%20pasta%20in%20a%20large%20pot%20of%20salted,%20boiling%20water%20until%20al%20dente.%20Drain%20then%20set%20aside.%3C/p%3E%3Cp%3ECook%20bacon%20in%20a%20large%20skillet%20over%20medium%20heat%20until%20crisp.%20Remove%20to%20a%20paper%20towel-lined%20plate%20then%20discard%20all%20but%201%20teaspoon%20bacon%20grease.%20Add%20chicken%20to%20the%20skillet%20then%20season%20with%20salt%20and%20pepper%20and%20saute%20until%20no%20longer%20pink.%20Add%20artichoke%20hearts%20and%20sun-dried%20tomatoes%20then%20saute%20until%20warmed%20through,%203-4%20minutes.%20Add%20spinach%20t
