Chicken Avocado Salad

Ingredients

  • 2 c. cooked chicken, cut in pcs
  • 4 ounce. warm pepper cheese, cut in strips
  • 1 (16 ounce.) can kidney beans, liquid removed
  • 2 med. stalks celery, thinly sliced
  • 10 cherry tomatoes, cut in half
  • 1 sm. onion, thinly sliced
  • Chili Mayonnaise (recipe below)
  • 1 med. avocado
  • 1 sm. head of lettuce, torn in sm. pcs
  • 1 (6 1/4 ounce.) pkg. tortilla chips

Directions

  1. Place chicken, cheese, beans, celery, tomatoes, and onion in large bowl. Cover and chill 4 to 6 hrs. Prepare chili mayonnaise. Just before serving, peel avocado and cut into thin slices. Reserve a few avocado slices for garnish. Add in remaining avocado and the lettuce to salad, toss with chili mayonnaise. Top with 1 c. of the tortilla chips. Garnish with reserved avocado slices. Serve with remaining tortilla chips.
