,%20I%20was%20prompted%20to%20try%20to%20find%20some%20healthier%20soup%20recipes.%20%20%20So%20I%20started%20searching%20on%20Cook%20Eat%20Share,%20Eating%20Well,%20FoodBuzz,%20TasteBook%20and%20Cooking%20Light.%20%20I%20came%20up%20with%20some%20promising%20ideas.%3C/p%3E%3Cp%3EThe%20first%20one%20that%20caught%20my%20eye%20was%20a%20Chicken%20&%20Spinach%20Soup%20with%20Fresh%20Pesto%20from%20Eating%20Well.%20%20As%20%20it%20was%20Sunday,%20I%20had%20not%20been%20to%20the%20grocery%20store%20in%20two%20weeks,%20and%20it%20was%2011:30,%20I%20thought%20this%20easy%20and%20quick%20soup%20would%20suffice.%20(I%20was%20able%20to%20run%20to%20the%20store,%20come%20home,%20prepare%20the%20soup%20and%20have%20it%20on%20the%20table%20by%201:00!)%3C/p%3E%3Cp%3EI%20made%20it%20quicker%20and%20easier%20because%20I%20had%20poached%20chicken%20breasts%20in%20the%20freezer%20and%20frozen%20pesto%20as%20well.%3C/p%3E%3Cp%3EOne%20cube%20of%20frozen%20pesto%20from%20last%20summer's%20basil%20harvest.%3C/p%3E%3Cp%3EI%20also%20made%20a%20few%20additions%20like%20adding%20both%20carrots%20and%20red%20pepper,%20adding%20a%20bit%20of%20thyme,%20and%20not%20chopping%20the%20spinach.%20%20You%20can%20see%20the%20original%20recipe%20if%20you%20go%20to%20the%20above%20link.%20%20Mine,%20with%20modifications,%20is%20below.%3C/p%3E%3Cp%3EChicken%20and%20Spinach%20Soup%20with%20Pesto%3C/p%3E%3Cp%3E4%20Frozen%20pesto%20cubes%20(or%20make%20your%20own%20fresh%20version)%3C/p%3E%3Cp%3EHeat%20olive%20oil%20in%20a%20large%20sauce%20pan.%20%20Add%20carrots,%20peppers%20and%20garlic%20and%20saute%20for%201-2%20minutes%20being%20careful%20not%20to%20burn%20the%20garlic.%3C/p%3E%3Cp%3EAdd%20chicken%20stock%20to%20pot%20with%20herbs.%20%20Bring%20to%20a%20boil,%20reduce%20to%20simmer%20and%20simmer%205%20minutes.%3C/p%3E%3Cp%3EAdd%20beans,%20spinach%20and%20chicken.%20%20Bring%20back%20to%20a%20boil,%20reduce%20to%20a%20simmer%20and%20simmer%205%20more%20minutes%20to%20blend%20flavors.%3C/p%3E%3Cp%3EAlmost%20ready%20to%20serve.%3C/p%3E%3Cp%3ELadle%20piping%20hot%20soup%20into%20serving%20bowls%20and%20garnish%20with%20a%20frozen%20pesto%20cube%20(or%20add%20a%20dollop%20of%20fresh%20pesto).%20%20Let%20guests%20stir%20in%20the%20pesto.%20%20Enjoy.%3C/p%3E%3Cp%3EStir%20in%20the%20pesto%20and%20enjoy!%3C/p%3E%3Cp%3EAnd,%20Happy%20Valentine%E2%80%99s%20Day%20to%20everyone!%3C/p%3E%3Cp%3ECannellini%20Bean%3C/p%3E){kind=link}
