Chicken and Smow Peas over Rice

Ingredients

  • 2 Tbsp Granulated Sugar
  • 8 Oz Cornstarch
  • 1 1/4 tsp Black Pepper
  • 1 1/4 tsp Ground Ginger
  • 1/4 tsp Garlic Powder
  • 1 1/4 gallons Water
  • 3/4 cup Soy Sauce
  • 200 oz Uncooked Chicken strips or cubes
  • 6 oz Green Onions, sliced
  • 26 oz Canned Mushrooms, drained
  • 44 oz Snow Peas
  • 56 oz Converted rice
  • 4 1/4 quarts Water
  • 2 Tbsp Salt
  • 2 Tbsp Margarin

Directions

  1. Combine in steam-jacketed kettle or saucepan
  2. Stir in water, soy sauce and chicken base
  3. Cook until clear and thickened
  4. Turn off heat. Cover and keep warm.
  5. Stir-fry chicken in hot oil until lightly browned and cooked throug, internal tempurature should be 165- degrees F. Drain off any liquid
  6. Add chicken and vegetables to reserved sause. cook for about 1 minute until snow peas are hot.
  7. Cook rice and serve 4 oz of sauce over 4 oz of rice
