  • 1 pound chicken breasts, boned, skinned, cut in 1-inch pcs
  • 3/4 pound hard shrimp, peeled, deveined, cut in halves
  • 2 tbsp. extra virgin olive oil
  • 2 lg. cloves fresh garlic, crushed
  • 1 lg. green pepper, coarsely minced
  • 1 lg. onion, coarsely minced
  • 1 teaspoon basil
  • 1 tbsp. oregano
  • 1/2 teaspoon red pepper flakes, crushed
  • 1 (4 ounce.) can mushrooms, stems, pcs
  • 1 (15 ounce.) can stewed tomatoes, liquid removed
  • 1 (4 ounce.) can tomato sauce
  • Salt to taste
  • 1 tbsp. fresh parsley, minced

Directions

  1. Prepare chicken and shrimp. Heat extra virgin olive oil in heavy pan. Saute/fry garlic lightly. Add in green pepper and onion and cook till tender. Add in chicken pcs and saute/fry just till tender. Add in shrimp and cook 3 min, stirring constantly. Add in basil, oregano, red pepper and mushrooms. Cook and stir 1 minute. Add in stewed tomatoes, tomato sauce, salt and parsley. Cook 8 to 10 min over low heat. Serve over rice or possibly linguine.
