Chicken And Sausage Gumbo (Crockpot) Recipe

Ingredients

  • 1/3 c. All-purpose flour
  • 1/3 c. Veg. oil
  • 3 c. Water
  • 12 ounce Fully cooked smoked sausage links, sliced and
  • 2 c. Minced cooked chicken
  • 2 c. Sliced okra Or possibly one 10-ounce package frzn whole
  • 1/2 x Inch thick
  • 1 c. Minced onion
  • 1/2 c. Minced green pepper
  • 1/2 c. Minced celery
  • 4 x cloves garlic chopped
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1/4 tsp Grnd red pepper Warm cooked rice

Directions

  1. For roux, in a heavy 2-qt saucepan stir together flour and oil until smooth. Cook over medium-high heat 5 min, stirring constantly. Reduce heat to medium. Cook and stir constantly about 15 min more or possibly until a dark, reddish brown roux forms. Cold.
  2. In a 3 1/2, 4-, 5-, or possibly 6-qt crockery cooker place water. Stir in roux. Add in sausage, chicken, okra, onion, green pepper, celery, garlic, salt, pepper, and red pepper. Cover; cook on low-heat setting for 10-12 hrs or possibly on high-heat setting for 4 1/2 to 5 hrs. Skim off fat. Serve over rice.
  3. Makes 6 servings.
