Ingredients

  • 3/4 c. mayonnaise
  • 1/4 c. water
  • 2 teaspoon lemon juice
  • 1 (10 3/4 ounce.) can cream of chicken soup, undiluted
  • 2 c. cooked chicken, cubed
  • 2 c. celery, minced
  • 2 tbsp. grated onion (optional)
  • 1/2 c. minced almonds
  • 1 1/2 c. UNCLE BEN'S® Original Recipe Long Grain Wild Rice
  • 1/2 c. shredded Cheddar or possibly American cheese
  • 2 c. crushed potato chips

Directions

  1. Combine mayonnaise, water and lemon juice. Add in soup and stir in chicken, celery, onion, almonds and rice. Place in a 2 qt casserole and sprinkle cheese on top.
  2. Bake at 350 degrees for 30 min. Crumble potato chips on top and bake 10 min more. Serve warm. Can be made a day ahead of time and refrigerated. It is very good and great for a large crowd.
