Ingredients

  • 1 Tbsp. oil
  • 1 x onion, finely minced
  • 3 x cloves garlic, crushed
  • 1 x green warm chilli, finely minced
  • 2 tsp grnd cumin
  • 1 tsp tumeric
  • 1 kg chicken thigh fillets, trimmed and minced
  • 1 c. red lentils
  • 1 tsp salt
  • 2 c. water
  • 1 tsp garam masala

Directions

  1. Heat oil in large saucepan and saute/fry onion, garlic and chilli till onion is transparent. Add in cumin and tumeric and cook for 1 minute.
  2. Add in chicken, lentils and salt and stir over moderate heat for a few min before adding water. Stir to combine and simmer gently, covered, till lentils have broken down and chicken is cooked. If you prefer less liquid, then remove lid and increase heat to reduce. Add in garam masala in last 10 min of cooking.
