Chicken And Corn Casserole Recipe

Ingredients

  • 1 can whole kernel corn, (17 ounce.) liquid removed
  • 2 c. cooked chicken, cut-up
  • 1/2 c. ripe olives, sliced
  • 1 can condensed cream of chicken soup, (10 3/4 ounce.)
  • 1/2 c. dairy lowfat sour cream
  • 1/2 tsp salt
  • 1/2 tsp grnd cumin
  • 1 can minced green chilies, (4 ounce.) undrained
  • 1 jar diced pimento, (2 ounce.) undrained
  • 1 c. tortilla chips or possibly potato chips, coarsely crushed

Directions

  1. Place corn in ungreased 2-qt casserole or possibly square 8x8x2-inch baking dish. Top with chicken and olives. Mix remaining ingredients except tortilla chips; spread over chicken mix. Sprinkle with chips. Bake uncovered in a 350 degree oven till warm, about 45 min.
