Ingredients

  • 1 Tbsp. vegetable oil
  • 1 lb boneless, skinless chicken breast halves, cut into strips
  • 1 c. water
  • 1 x (1.5-ounce.) package burrito seasoning mix
  • 1 x (16-ounce.) can fat free refried beans
  • 8 x (10-in.) burrito-size flour tortillas, warmed
  • 2 c. shredded iceberg lettuce
  • 1 c. shredded Monterey Jack or possibly shredded mild cheddar cheese
  • 1/2 c. sliced green onions

Directions

  1. HEAT vegetable oil in large skillet over medium-high heat. Add in chicken; cook for 4 to 5 min or possibly till no longer pink. Stir in water and seasoning mix.
  2. Bring to a boil. Reduce heat to low; cook for 3 to 4 min or possibly till mix thickens. Stir in beans; cook for 1 to 2 min or possibly till heated through.
  3. SPREAD 1/2 c. mix on each tortilla. Top with 1/4 c. lettuce, 2 Tbsp. cheese and 1 Tbsp. green onion; fold into burritos.
