Chicken Alfredo Roll-Ups

FOR THE SAUCE:

Melt the butter in a saucepan over medium heat. Add the cream and simmer for about 5 minutes. Stir in the cheese, garlic powder and nutmeg.

FOR THE ROLL-UPS:

Preheat the oven to 350 degrees. Spray an 8 x 8 inch baking dish with non-stick cooking spray.Spread about 2 tablespoons of the sauce on 1 noodle, spread with mozzarella cheese, about 1 tablespoon of chicken, a few pieces of green onion and a few pieces of mushrooms. Roll up the lasagna noodle and place in the dish seam side down. Pour remaining Alfredo sauce on the rolls and top with remaining mozzarella cheese.

Bake, uncovered for 30 minutes.
