Chicken Adobo Recipe

My father-in-law, who is an excellent cook, made this for us last week. I really can't imagine an easier recipe...and gives an amazing return for very little effort. I've never had whole pieces of chicken made adobo style before, but it was excellent. This is also very kid friendly. One of our sons ate 4 drumsticks!

Directions

  1. Combine all ingredients in a pan, cover and marinate 1 to 3 hours.
  2. Bring to a boil then lower heat to simmer for about 30 minutes.
  3. Remove cover and simmer for another 15 minutes, or until much of the liquid has evaporated and the chicken is lightly brown .

        John, This is one of my favorite's, I make it at least twice a month. I make mine with halved -baked potatoes-coated with parmesan cheese .
