  • 3/4 c. Italian seasoned find dry bread crumbs
  • 1/4 c. grated Parmesan cheese
  • 6 whole chicken breast, split lengthwise and boned
  • 1/2 c. sliced green onion
  • 2 tbsp. butter
  • 2 tbsp. flour
  • 1 c. lowfat milk
  • 1 (10 ounce.) frzn minced spinach, thawed and well liquid removed
  • 1 (4 ounce.) pkg. boiled ham

Directions

  1. Combine bread crumbs and cheese; dip chicken breast halves in crumb mix to coat. Set remaining crumb mix aside. In saucepan cook onion in butter till tender.
  2. Blend in flour; fold in lowfat milk all at once. Cook and stir till thickened and bubbly. Cook and stir 1 minute more. Stir in spinach and ham. Spoon spinach mix over chicken; sprinkle with remaining crumb mix. Bake uncovered in 350 degree oven for 40 to 50 min or possibly till done.
