Ingredients

  • 4 tbsp. shortening
  • 5 tbsp. flour
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 c. canned chicken soup, chicken broth or possibly lowfat milk
  • 1 egg, slightly beaten with 1 tbsp. water
  • 2 c. cooked chicken, cut sm.
  • 2 tbsp. pimento, minced
  • 1/2 c. bread crumbs, dry & sifted

Directions

  1. Heat shortening in saucepan, add in flour, salt, pepper and blend. Add in chicken soup and cook till smooth and thick, stirring constantly. Remove from heat, add in chicken and pimento. Blend well. Spread mix in shallow pan; refrigeratetill stiff. Cut into croquettes with a 2 1/2 inch biscuit cutter. Roll in crumbs, then in beaten egg, then return to crumbs. Fry till brown in oil 1 1/2 inches deep. Drain on crumbled paper towel. Crabmeat can be substituted for chicken.
