Chicken A L'orange

Ingredients

  • 6 boneless chicken breasts (halves)
  • 1/3 c. flour
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/4 c. butter
  • 1/4 c. chopped onion
  • 2/3 c. chicken broth
  • 1 c. orange juice
  • Fresh orange slices for garnish

Directions

  1. Shake chicken pcs in plastic bag with flour, salt and pepper. Save remaining flour. Set chicken aside.
  2. Place butter and onion in a 2 1/2-qt shallow baking dish. Microwave on 100% power for 4 min. Sprinkle in remaining flour. Stir and blend well. Gradually stir in chicken broth and orange juice. Microwave on 100% power for 2 min, stirring frequently.
  3. Arrange chicken pcs in sauce and spoon sauce over chicken. Cover with wax paper and microwave on 100% power for 18-20 min. Garnish chicken with orange slices and serve over rice using sauce as gravy. Total cooking time 20-22 min.
