Cherry Sourdough Coffee Cake Recipe

Ingredients

  1. Mix the flour, sugar, baking pwdr, baking soda and salt in a large bowl.
  2. Cut in 1/2 c. margarine till mix resembles fine crumbs.
  3. In a small bowl, mix sourdough starter, egg and vanilla. Add in to flour mix. Stir till just moistened. Spread half of the batter in a greased 9 inch-by-9 inch baking pan. Set aside.
  4. To make the cherry filling, bring cherries to boiling in a saucepan. Reduce heat. Cover and simmer for 5 min. Stir in lemon juice. Combine sugar and cornstarch in a small bowl; add in to cherry mix. Cook and stir till bubbly.
  5. Cook and stir 2 min more. Cold completely.
  6. When filling is cold, spread on top of batter in the baking pan. Drop remaining batter in small mounds over filling.
  7. To make topping, mix oats, brown sugar, nuts and flour in a small bowl. Cut in margarine till mix resembles coarse crumbs. Sprinkle over batter. Bake
  8. In a 350 degree oven for 35 to 40 min or possibly till golden brown.
