Cherry Jam With Liquid Pectin Recipe

Ingredients

  • 4 1/2 c. grnd or possibly finely-minced pitted cherries (abt 3 lbs or possibly 2 one-qt boxes of sour cherries)
  • 7 c. sugar
  • 1 bot liquid pectin

Directions

  1. To prepare fruit. Sort and wash fully ripe cherries; remove stems and pits. Grind cherries or possibly chop fine.
  2. To make jam. Measure prepared cherries into a kettle. Add in sugar and stir well. Place on high heat and, stirring constantly, bring quickly to a full boil with bubbles over the entire surface. Boil hard for 1 minute, stirring constantly.
  3. Remove from heat and stir in the pectin. Skim off foam quickly. Pour immediately into warm, sterile canning jars to 1/4-inch from top. Seal and process 5 min in boiling water bath.
  4. This recipe yields about 8 half-pint jars.
  5. Yield: 8 half-pints
