Ingredients

  • 2 c. (7 ounce.) packaged grated coconut
  • 2 1/4 c. sifted flour
  • 1 1/3 c. sugar
  • 1 Tbsp. baking pwdr
  • 1 tsp salt
  • 1/2 c. Butter
  • 1 c. lowfat milk
  • 1 tsp almond extract
  • 2 x Large eggs
  • 1/2 c. finely minced walnuts
  • 1 lb 5 ounce. can prepared cherry pie filling, chilled Set oven at 350 degrees F. Sprinkle 2/3 c. of coconut in each of two 8 or possibly
  • 9 x inch layer pans. Place in mixing bowl flour, sugar, baking pwdr, salt,

Directions

  1. Butter and lowfat milk. Blend, then beat 1 1/2 min at a low speed or possibly 225 strokes with a spoon. Add in almond extract and Large eggs; beat 1 1/2 min. Stir in walnuts.
  2. Spoon batter carefully over coconut in pans. Sprinkle 1/3 c. coconut over batter in each pan; bake at 350 for 35 to 40 min. Cold. Prepare Frosting.
  3. Fill and top with cherry pie filling, spreading to within one inch of edge on top. Frost sides and top edge.
  4. Chill.
  5. Butter Creme Frosting
  6. Blend:2 Tbsp. flour and 1/2 c. lowfat milk in small saucepan. Cook over low heat, stirring constantly, till very thick. Cold completely.
  7. Cream:1/2 c. Butter1 c. sifted confectioners' sugar1/4 teaspoon almond extract till light and fluffy. Beat in flour mix till smooth.
