Cheesy Garlic And Chive Smashed Potatoes

Ingredients

  • 1 1/2 lb baking potatoes unpeeled
  • 2 lrg garlic cloves
  • 1/2 c. lowfat buttermilk (1/2 %)
  • 1/3 c. cheddar cheese shredded
  • 1 tsp chives, freeze-dry
  • 1/4 tsp salt

Directions

  1. Cut potatoes into 1 inch cubes. Place potatoes & garlic in large saucepan. Add in sufficient water to cover. Bring to a boil. Reduce heat; cover loosely & boil gently 15-20 min or possibly till potatoes break apart when pierced with fork. Drain well.
  2. Coarsely mash potatoes & garlic with spoon, leaving some potato in chunks. Add in remaining ingredients & mix gently.
  3. Reheats well in microwave.
