Ingredients
- Cheese Steak Empanadas With Guacamole - Me
- 2 tablespoons butter, plus more for spreading on top of empanadas
- 1/2 large sweet onion, chopped
- 1/2 cup cherry tomatoes, quartered lengthwise
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon Chipotle Chile Spice
- 1/2 teaspoon Smoked Paprika
- 1/2 teaspoon Beau Monde
- 1/2 Teaspoon Fennel Seed
- 1 lb. thin cut sirloin steak, cut into small pieces
- 1/4 cup chopped cilantro
- 2 ready made pie crusts
- 1 1/4 cups shredded Mexican cheese blend, divided
- cooking spray
- To make Guacamole:
- 2 large ripe avocados, peeled, seeded and mashed
- juice from 1/2 fresh lime
- salt and pepper to taste

...so%20I%20thought%20and%20thought%20about%20how%20best%20to%20use%20the%20spices%20I%20was%20given%20and%20let%20me%20go%20on%20record%20right%20now%20and%20say,%20I%20thought%20good!%3C/p%3E%3Cp%3ERecently%20I%20told%20you%20about%20a%20friend%20who%20is%20a%20Butter%20Snob,%20she%20actually%20needs%20some%20stickers%20that%20say%20so!%20%20She%20educated%20me%20about%20the%20fat%20content%20in%20different%20butters,%20which%20is%20why%20one%20would%20taste%20butter,%20I%20mean%20better,%20than%20another...So%20when%20I%20was%20asked%20to%20use%20Challenge%20Butter,%20I%20immediately%20read%20the%20label...and%20dang,%20it's%20got%20tons%20of%20the%20good%20stuff...fat...and%20even%20my%20Butter%20Snob%20Friend%20would%20give%20this%20a%20big%20thumbs%20up,%20which%20is%20the%20designated%20sign%20Butter%20Snobs%20use%20to%20express%20their%20approval%20for%20butter.%20%20Actually,%20I%20should%20say%20buttah...because%20this%20butter%20is%20more%20like%20a%20buttah...you'll%20want%20to%20say%20the%20%22ah%22%20after%20tasting%20it...try%20it...see%20if%20you%20can%20prove%20me%20wrong!%3C/p%3E%3Cp%3EChallenge%20Butter%20made%20by%20%20Challenge%20Dairy%20is%20having%20a%20great%20sweepstakes!%20%20They're%20giving%20away%20a%207%20day/6%20night%20vacation%20to%20the%20Mountain%20Sky%20Guest%20Ranch%20in%20Montana!%20%20Think%20of%20it...shushing%20down%20ski%20slopes%20on%20buttered%20skiis...sipping%20buttered%20rum%20by%20the%20fire...having%20a%20butter%20massage%20in%20the%20spa...you%20all%20know%20it's%20true%20-%20everything%20is%20better%20with%20butter!%20%20Go%20check%20them%20out%20and%20enter%20their%20contest...and%20if%20you%20win%20remember%20to%20take%20me%20with%20you!%3C/p%3E%3Cp%3EBack%20to%20the%20challenge%20of%20creating%20a%20recipe%20using%20Challenge%20Butter%20and%20these%204%20spices...%3C/p%3E%3Cp%3ESpice%20Islands%20Chipotle%20Chile...smokey,%20rich,%20deep%20flavor%20with%20a%20bit%20of%20heat...yeah%20babeeee!%20%20I%20had%20not%20used%20this%20spice%20before%20but%20I%20can%20see%20it's%20going%20to%20be%20a%20%22regular%22%20around%20here%20in%20everything%20from%20soups,%20chilis,%20sauces%20to%20dressings!%3C/p%3E%3Cp%3ESpice%20Islands%20Beau%20Monde%20-%20I%20love%20this%20spice!%20%20It's%20great%20in%20stews,%20soups,%20casseroles%20-%20anything%20that%20needs%20a%20mild,%20thyme-like%20flavor...if%20you%20don't%20have%20this%20in%20your%20spice%20cabinet%20-%20act%20quickly%20and%20get%20it!%3C/p%3E%3Cp%3ESpice%20Islands%20Smoked%20Paprika...honestly,%20what%20can%20I%20say%20but%20love%20at%20first%20bite?%20%20This%20Paprika%20will%20make%20all%20other%20Paprika's%20pale%20in%20comparison...just%20look%20at%20that%20color!%20%20And%20the%20taste?%20%20Unlike%20any%20Paprika%20you've%20ever%20had...dang%20good!%3C/p%3E%3Cp%3ESpice%20Islands%20Fennel%20Seed...now,%20I've%20used%20this%20spice%20over%20and%20over%20and%20love%20it%20for%20the%20distinctive%20flavor%20(anise/licorice)%20it%20lends%20to%20recipes%20but%20I%20couldn't%20imagine%20a%20recipe%20with%20Chipotle%20Chile,%20Beau%20Monde,%20Paprika%20AND%20Fennel%20until%20my%20friend%20said%20to%20think%20of%20fennel%20seed%20as%20a%20vegetable%20and%20then%20the%20light%20came%20on!%20%20Voila!%20%20Just%20like%20that%20I%20was%20back%20in%20the%20hunt!%3C/p%3E%3Cp%3EChallenge%20Butter%20started%20this%20recipe%20right...I%20sauted%20diced%20onion,%20cherry%20tomatoes%20and%20thin%20cut%20sirloin%20steak%20%20in%20butter%20until%20the%20steak%20was%20browned%20and%20the%20vegetables%20were%20soft%20-%20then%20I%20added%20the%20spices%20which%20gave%20all%20a%20nice%20rich%20color!%3C/p%3E%3Cp%3EPurchased%20pie%20crust%20dough%20makes%20this%20recipe%20a%20snap%20to%20make!%20%20Cheddar%20and%20Monterey%20Jack%20cheese%20is%20spread%20on%20half%20of%20the%20pie%20crust,%20then%20half%20of%20the%20steak%20mixture%20is%20put%20on%20top%20and%20a%20bit%20more%20cheese%20is%20added.%20Fold%20the%20dough%20over%20and%20pinch%20to%20seal,%20then%20brush%20with%20melted%20butter...it's%20enough%20to%20make%20me%20want%20to%20do%20a%20Mexican%20Hat%20Dance%20right%20now!%3C/p%3E%3Cp%3EPreheat%20oven%20to%20375%20degrees.%20%20In%20a%20large%20skillet%20melt%20butter.%20%20Add%20chopped%20onions,%20tomatoes%20and%20steak,%20cooking%20and%20stirring%20until%20steak%20is%20browned%20and%20vegetables%20are%20soft,%20about%2010%20minutes.%20%20Stir%20in%20salt%20and%20pepper,%20spices%20and%20cilantro.%20%20Mix%20well.%20%20Remove%20from%20heat.%20%20Prepare%20a%20rimmed%20cooking%20sheet%20by%20spraying%20with%20cooking%20spray.%20%20Put%20one%20pie%20crust%20on%20cooking%20sheet.%20%20Spread%201/2%20cup%20of%20cheese%20onto%20half%20of%20the%20pie%20crust.%20%20Top%20with%20half%20of%20the%20meat%20mixture.%20%20Fold%20crust%20over%20and%20pinch%20edges%20to%20seal.%20%20Brush%20top%20of%20empanada%20with%20softened%20butter.%20%20Make%203%20slits%20in%20top%20to%20allow%20air%20to%20vent.%20%20Repeat%20with%20remaining%20ingredients.%20%20Bake%20in%20375%20degree%20oven%20for%2025%20to%2030%20minutes%20or%20until%20tops%20of%20empanadas%20are%20a%20golden%20brown.%20%20Remove%20from%20oven%20and%20let%20sit%20for%205%20minutes.%3C/p%3E%3Cp%3EMake%20Guacamole:%20%20Mash%20avocados%20and%20squeeze%20fresh%20lime%20juice%20over%20top.%20%20Add%20salt%20and%20pepper%20to%20taste.%3C/p%3E%3Cp%3ESlice%20empanadas%20into%204%20pieces%20each%20and%20serve%20with%20guacamole.%20%20Garnish%20with%20additional%20cilantro%20if%20desired.%20%20Serves%204%20to%206.%3C/p%3E%3Cp%3EThis%20is%20the%20perfect%20cure%20for%204%20days%20of%20turkey%20leftovers.%20And%20the%20empanadas%20reheat%20great%20in%20the%20microwave!%3C/p%3E){kind=link}
