Ingredients

  • 3/4 lb feta cheese - (abt 2 c.)
  • 1 lb cottage cheese not low-fat
  • 4 x Large eggs beaten Salt to taste Freshly-grnd white pepper to taste
  • 1/4 lb Kefalotiri cheese grated
  • 1 lb filo dough thawed if frzn
  • 1 c. butter melted

Directions

  1. Break feta into small pcs. Add in cottage cheese and mix together. Add in Large eggs and mix thoroughly. Season to taste with salt and pepper, taking care not to over-salt. Add in Kefalotiri cheese.
  2. Open filo dough box, remove dough and cover with damp towel. Cut each sheet into 4 (2- by 2 1/2-inch) strips. Brush each strip with butter. Put 1 tsp. filling at bottom of each strip and fold corner to corner, end over end, into triangle. Repeat till all strips are used.
  3. Place in 2 nonstick 13- by 9-inch baking pans, seam-side down. Brush tops with a little melted butter to prevent drying out. Bake at 375 degrees till golden, 20 to 25 min. Serve warm.
  4. This recipe yields 4 dozen.
  5. Comments: Boeregs can also be stuffed with spinach and herbs can be added for additional flavor. The pastries can be prepared in advance, frzn and then baked. Allow an extra five min for baking. Look for Kefalotiri cheese at Middle Eastern markets and delis.
