Ingredients
- 1 tbsp soft butter
- 1 lb firm potatoes yukon gold or fingerling
- 1 onion finely chopped
- 1 clove garlic finely choppped
- 1 bay leaf
- 7 oz bacon cubes
- 6 1/2 tbsp dry white wine
- 8 oz cubed strong soft cheese
Directions
- Preheat oven to 375 and prepare 6 cup muffin tin with buter. Peel the potatoes and using a mandoline julienne blade make matchsticks. Put the onion garlic, bay leaf and bacon into a larbge nonstick frying pan and cook until the bacon is golden. Add the wine and reduce until only 1 couple tbsp of liquid remian. Stir in the potato matchsticks, and take off the heat. Remove the bay leaf and stir in the cubes of cheese.
- divide the mixture between the 6 cups of muffin tins and bake for 15-20 min or until golden and bubbly
- A silcone muffin would work well
