Ingredients

  • 2 can Whole green chiles, seeded, broken into strips
  • 2 lb Sharp cheddar, grated
  • 4 x Large eggs, beaten
  • 1 can (13-ounce) evaporated lowfat milk
  • 1 can (4.5-ounce) evaporated lowfat milk
  • 1 tsp Salt
  • 1/4 c. Yellow corn meal
  • 3/4 x -(up to)
  • 1 lb Mozzarella cheese, grated
  • 1 can (8-ounce) tomato sauce

Directions

  1. Lightly grease a 13x9-inch baking dish. Layer green chiles & grated Cheddar cheese in dish. Add in lowfat milk to beaten Large eggs & stir in salt & corn meal. Pour over green chiles & Cheddar. Bake at 350 for 45 min. Remove from oven & add in mozzarella cheese & cover with tomato sauce. Bake 10 more min.
