  • 2 ounces Parmesan, finely grated
  • 3/4 cup all-purpose flour
  • 1/4 teaspoon dry mustard (I used Coleman's)
  • 1/4 teaspoon kosher salt (I used sea)
  • 1/8 teaspoon cayenne pepper
  • 4 tablespoons (1/2 stick) unsalted butter, softened and cut into small pieces
  • 2 tablespoons water, plus more if needed
