Ingredients

  • 10 slc bacon minced
  • 1 3/4 x all-purpose flour
  • 2 Tbsp. sugar
  • 1 Tbsp. baking pwdr
  • 1 tsp salt
  • 1 1/2 c. shredded cheddar cheese
  • 1 x egg beaten
  • 1 c. lowfat milk
  • 3 Tbsp. butter melted

Directions

  1. Cook bacon till crisp. Drain well reserving 2 Tbsp drippings. In large bowl combine flour, sugar, baking pwdr and salt; stir in cheese and bacon. In small bowl combine egg, lowfat milk, butter and reserved bacon drippings. Add in to dry ingredients; stir just till moistened. Divide batter among 10 medium greased muffin c.. Bake in 400F oven for 20-25 min.
