Ingredients
- 3 ounces (85 grams) bittersweet or semisweet chocolate, coarsely chopped
- 4 large eggs
- 1 1/3 cups (320 ml) milk, divided
- 1 tablespoon (12 grams) pure vanilla extract
- 4 cups (400 grams) sifted cake flour
- 2 cups (400 grams) granulated white sugar
- 2 tablespoons (30 grams) baking powder
- 1 teaspoon (5 grams) salt
- 1 cup (227 grams) unsalted butter, softened and cut into pieces (I only added 1/2 cup butter)
- 9 ounces (250 grams) of semi-sweet or bittersweet chocolate, coarsely chopped
- 1 cup (240 ml) heavy whipping cream
- 1 tablespoon brandy (optional)

%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees%20F%20(177%20degrees%20C).%20Grease,%20flour%20or%20line%20four%206%E2%80%9D%20round%20pans,%20if%20you%20want%204%20layers%20like%20I%20made%20%20and%20if%20you%20have%20checkerboard%20cake%20pans%20flour%20and%20line%20three%209%20by%201%20inch%20(23%20x%202.54%20cm)%20%20with%20parchment%20paper.%20Set%20aside.%3C/p%3E%3Cp%3EMelt%20the%20chocolate%20in%20a%20stainless%20steel%20bowl%20set%20over%20a%20saucepan%20of%20simmering%20water.%20%20Set%20aside.%3C/p%3E%3Cp%3EIn%20a%20separate%20bowl%20whisk%20together%20the%204%20large%20eggs,%201/3%20cup%20(80%20ml)%20of%20milk,%20and%201%20tablespoon%20pure%20vanilla%20extract.%20%20Set%20aside.%3C/p%3E%3Cp%3EIn%20the%20bowl%20of%20your%20electric%20mixer,%20combine%20the%20flour,%20sugar,%20baking%20powder%20and%20salt%20and%20beat%20to%20combine.%20%20Add%20the%20butter%20and%20remaining%201%20cup%20(240%20ml)%20milk%20and%20beat%20on%20low%20speed%20until%20the%20dry%20ingredients%20are%20moistened.%20%20Increase%20the%20speed%20to%20medium%20and%20beat%20for%20about%202%20minutes.%20%20%20Scrape%20down%20the%20sides.%20%20Gradually%20add%20the%20egg%20mixture%20to%20the%20flour%20mixture%20and%20beat%20to%20incorporate%20the%20ingredients.%3C/p%3E%3Cp%3EDivide%20the%20batter%20in%20half,%20placing%20each%20in%20a%20separate%20bowl.%20Stir%20the%20melted%20chocolate%20into%20one%20bowl%20of%20batter%20until%20it%20is%20thoroughly%20combined.%20%20Now%20if%20you%20have%20checkerboard%20pans%20proceed%20like%20in%20the%20original%20recipe%20in%20Joy%20of%20Baking.%20And%20if%20you%20don%E2%80%99t%20have%20checkerboard%20cake%20pan,%20divide%20each%20batter%20in%20to%20two%20equally%20and%20bake%204%20cakes%20of%20equal%20size,%20that%20is%20two%20vanilla%20and%20two%20chocolate%20cakes.%20(If%20you%20only%20want%20two%20layers%20bake%20one%20cake%20each%20in%20a%20bigger%20pan).%3C/p%3E%3Cp%3EBake%20about%2020%20minutes%20or%20until%20a%20tester%20inserted%20near%20the%20center%20comes%20out%20clean%20and%20the%20cakes%20spring%20back%20when%20pressed%20lightly%20in%20the%20center.%20%20The%20cakes%20should%20start%20to%20shrink%20from%20the%20sides%20of%20the%20pans%20only%20after%20removal%20from%20the%20oven.%20%20%20Be%20sure%20that%20you%20do%20not%20over%20bake%20this%20cake%20or%20it%20will%20be%20dry.%3C/p%3E%3Cp%3ELet%20the%20cakes%20cool%20in%20the%20pans%20on%20a%20wire%20rack%20for%20about%2010%20minutes.%20%20Loosen%20the%20sides%20with%20a%20knife%20or%20spatula%20and%20invert%20onto%20a%20greased%20wire%20rack.%20%20To%20prevent%20splitting,%20reinvert%20so%20that%20the%20tops%20are%20up%20and%20cool%20completely.%3C/p%3E%3Cp%3EAssembling%20the%20cake:%3C/p%3E%3Cp%3ECut%20each%20cake%20into%203%20circles%20uniformly%20using%20cookie%20cutter/%20lid.%20Now%20swap%20inner%20circle%20rings%20with%20opposite%20layer.%20Spread%20little%20ganache%20inside%20of%20each%20circle%20before%20putting%20in%20the%20next%20piece.%20This%20keeps%20the%20pieces%20together%20when%20the%20cake%20is%20cut.%3C/p%3E%3Cp%3EPlace%20first%20layer%20on%20a%20wire%20rack.%20%20Spread%20with%20a%20thin%20layer%20of%20ganache.%20Place%20the%20second%20layer%20on%20top%20of%20the%20first%20and%20spread%20with%20another%20thin%20layer%20of%20ganache,%20then%20repeat%20with%20the%20third%20and%20fourth%20layer.%3C/p%3E%3Cp%3EPour%20the%20rest%20of%20the%20ganache%20on%20the%20top%20of%20the%20cake%20and%20with%20a%20spatula%20gently%20spread%20the%20ganache%20so%20it%20drips%20down%20the%20sides%20of%20the%20cake.%20%20Use%20leftover%20ganache%20to%20cover%20any%20missed%20spots.%3C/p%3E%3Cp%3EOnce%20the%20ganache%20has%20set%20gently%20transfer%20the%20cake,%20using%20a%20large%20offset%20spatula,%20to%20a%20platter%20or%20cake%20stand.%3C/p%3E%3Cp%3EStore%202%20days%20at%20room%20temperature%20or%205%20days%20refrigerated%20although%20this%20cake%20is%20best%20eaten%20the%20first%20day.%3C/p%3E%3Cp%3EGanache:%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3E9%20ounces%20(250%20grams)%20of%20semi-sweet%20or%20bittersweet%20chocolate,%20coarsely%20chopped%3C/p%3E%3Cp%3E1%20cup%20(240%20ml)%20heavy%20whipping%20cream%3C/p%3E%3Cp%3E1%20tablespoon%20brandy%20(optional)%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EPlace%20the%20chopped%20chocolate%20in%20a%20food%20processor%20and%20pulse%20until%20finely%20chopped.%20%20Transfer%20the%20chocolate%20to%20a%20stainless%20steel%20bowl.%3C/p%3E%3Cp%3EMeanwhile,%20place%20the%20cream%20in%20a%20small%20saucepan%20and%20bring%20to%20a%20boil.%20%20Immediately%20pour%20the%20cream%20over%20the%20chocolate%20and%20let%20stand%20about%205%20minutes.%20%20Stir%20gently%20and,%20if%20necessary,%20strain%20through%20a%20fine%20strainer%20to%20remove%20any%20lumps.%20%20Stir%20in%20brandy.%20%20Allow%20to%20cool%20until%20ganache%20is%20lukewarm%20and%20pourable.%3C/p%3E%3Cp%3ECheck%20out%20this%20video%20on%20You%20Tube%20to%20get%20an%20idea%20of%20assemblin
