Charred Sweet Onions And Blue Cheese

Ingredients

  • 2 Tbsp. oil
  • 1 lrg sweet onion halved, and thinly sliced
  • 1 tsp balsamic vinegar
  • 1 tsp red wine vinegar
  • 2/3 c. crumbled blue cheese Salt to taste Freshly-grnd black pepper to taste
  • 1 Tbsp. snipped chives for garnish

Directions

  1. Heat oil in large heavy skillet over medium-high heat. Add in onion. Cook, stirring occasionally to avoid burning but to allow browning, about 5 to 6 min. Stir in balsamic and red wine vinegars, then blue cheese. Remove from heat.
  2. Add in salt and pepper to taste. (Can be made 3 days ahead and refrigerated. To serve, let sit out till room temperature or possibly gently hot in microwave oven.) Adjust seasoning. Garnish with chives.
  3. This topping can be served at room temperature or possibly hot, slightly reheated in the microwave oven. It combines well with Dijon mustard.
  4. This recipe yields 4 to 8 servings.
