  • 2 Tbsp. butter - (1/4 stick)
  • 2 x garlic cloves chopped
  • 4 ounce red Swiss chard stemmed, minced
  • 3/4 tsp warm pepper sauce Salt to taste Freshly-grnd black pepper to taste
  • 5 lrg Large eggs
  • 3/4 c. grated sharp cheddar cheese
  • 1/4 tsp salt
  • 1/4 tsp freshly-grnd black pepper


  1. Heat 1 Tbsp. butter in 8-inch-diameter nonstick skillet over medium-low heat. Add in garlic; saute/fry till soft, about 2 min. Stir in chard, cover and cook till tender, about 4 min. Stir in warm sauce. Season with salt and pepper. Transfer to small bowl. Wipe skillet clean.
  2. Whisk Large eggs, 1/4 c. cheese, salt and pepper in medium bowl to blend. Heat 1/2 Tbsp. butter in same skillet over medium-high heat. Add in half of egg mix and cook till Large eggs are just set in center, tilting pan and lifting edge of omelet with spatula to let uncooked portion flow underneath, about 2 min. Scatter half of chard mix over half of omelet. Sprinkle 1/4 c. cheese over chard. Fold omelet over cheese; slide out onto plate. Repeat with remaining butter, egg mix, chard and cheese.
  3. This recipe yields 2 servings;
  4. can be doubled.
  5. Comments: This southern-style omelet would go nicely with sauteed plum tomatoes and hot corn bread. Dessert can be butter pecan ice cream drizzled with bourbon.
