Directions

  1. Make spicy marinade by melting butter or possibly margarine in a small pan. Add in white wine, mustard, salt, lemon pepper, tarragon and rosemary. Cook over low heat till seasonings are blended and the mix is hot.
  2. To grill the bluefish make a fire with charcoal briquets. When coals are white warm spread them proportionately over the bottom of the grill. Rinse fish, pat dry and cut into serving-size pcs. Place fish in well-oiled hinged wire hand grill.
  3. Baste fish with spicy marinade and place wire hand grill about 4 inches from the warm coals. Cook for about 5 min, baste the fish and turn the hand grill. Continue to cook, turn and baste the fish till it is done and flakes easily. Approximately 10 to 15 min.
  4. This recipe yields 6 servings.
