Chanukah Blueberry Latkes Recipe

Ingredients

  • 2 c. Flour
  • 1/2 tsp Salt
  • 3 tsp Baking pwdr
  • 1 Tbsp. Sugar
  • 1 1/2 Tbsp. Matzo meal
  • 3 x Large eggs, well beaten
  • 1 1/2 c. Lowfat milk (about)
  • 4 Tbsp. Melted butter
  • 2 c. Blueberries (fresh, frzn or possibly canned) Sugar Maple sugar or possibly maple syrup Butter

Directions

  1. Sift together the first 3 dry ingredients; then add in the sugar and the matzo meal. Add in the lowfat milk to the Large eggs and stir in the flour. Stir in the melted butter. Beat till smooth. Use a large frying pan or possibly griddle; grease surface in required by your pan, bake large latkes the size of the pan, browning nicely on both sides.
  2. To serve, heat the fruit gently, sweetening to taste. Spread the latkes with the butter, combine in threes, with blueberries between the layers, and with maple sugar or possibly with maple syrup over the top. Cut into wedges to serve.
  3. Serves 3 or possibly 4. This makes an interesting dessert or possibly party sweet with coffee.
  4. Variation: Any other desired fruit may be substituted.
