Ingredients

  • 2 med red bell peppers Extra virgin olive oil spray as needed
  • 2 tsp extra virgin olive oil
  • 1/2 med yellow onion sliced (1 c.)
  • 2 med garlic cloves crushed
  • 2 x ripe medium tomatoes cut into wedges
  • 1 tsp sugar Salt to taste Freshly-grnd black pepper to taste
  • 4 x pita breads

Directions

  1. Preheat broiler. Line a baking tray with aluminum foil and place red bell peppers on tray. Spray peppers with extra virgin olive oil spray. Broil 5 min per side.
  2. Heat oil in a medium-sized nonstick frying pan on medium-high heat. Add in onion and garlic and saute/fry 5 min. Remove peppers from broiler, and core, seed, and slice them. Add in peppers and tomatoes to frying pan. Simmer 15 min. If mix is watery, cook a few min more. Sprinkle with sugar and toss well. Add in salt and pepper to taste.
  3. Place pita in broiler, that should still be hot from cooking peppers, for 2 min before serving. Spoon hot salad into a serving bowl or possibly on individual plates with couscous salad and serve with hot pita bread.
  4. This recipe yields 4 servings.
