Directions

  1. Sauté the celery root in a medium size sauté pan over medium heat in the olive oil until tender. Add the shallots and the butter and cook for 2 more minutes. Place the celery root, shallots and butter in a food processor and puree until smooth. Season with salt and pepper. Let cool.
  2. Form the tortellini or ravioli (easier) with freshly made or store bought pasta sheets and cook them in almost boiling salted water
  3. Lightly toss the ingredients together in a small mixing bowl. Arrange the cooked tortellini on serving plates, divide the salad evenly on top of the pasta and drizzle with the remaining OJ and Olive oil from the bottom of the bowl.
