Cauliflower And Potato Curry (Vegan)

Ingredients

  • 4 c. quartered peeled potatoes
  • 1 sm cauliflower cut into florets
  • 1 pch asafetida
  • 3/4 tsp grnd turmeric
  • 1/2 tsp chilli pwdr
  • 1 1/2 tsp grnd cumin
  • 3/4 tsp salt
  • 1 x big healthy pinch sugar
  • 2 x tomatoes minced
  • 1 1/4 c. water
  • 1/2 tsp garam masala
  • 1/2 c. wheat berries (optional)

Directions

  1. Add in all ingredients to a crockpot and cook on LOW for approximately six hrs. If you're adding wheat berries, cook them on HIGH with an additional c. of water for an hour, then add in remaining ingredients and cook on LOW.
  2. With the wheat berries, if things start drying out, add in more water.
