Ingredients
- 1 med Cauliflower, cut in florets
- 2 c. Small peas fresh or possibly defrosted
- 1/4 c. Chicken broth
- 2 x Celery stalks finely minced
- 3 x Scallions, finely minced
- 2 Tbsp. Parsley, minced
- 1/3 c. Red bell pepper, minced
- 1 Tbsp. Balsamic vinegar
- 1 Tbsp. Dijon mustard
- 3 Tbsp. Lowfat sour cream ("lite")
- 1/3 tsp Salt
- 1/3 tsp White pepper
- 1 c. Ham (opt'l.) cooked, minced Chives, minced (garnish)
Directions
- Steam cauliflower and peas till barely tender. Drain well; put into a bowl. While still hot, pour the chicken broth over the vegetables. Set aside to cold.
- Combine celery, scallions, parsley, red bell pepper, vinegar and mustard.
- Fold in lowfat sour cream and add in salt and pepper. Toss gently with cauliflower and peas, adding ham if used. Sprinkle with chives.
