Directions

  1. Steam cauliflower and peas till barely tender. Drain well; put into a bowl. While still hot, pour the chicken broth over the vegetables. Set aside to cold.
  2. Combine celery, scallions, parsley, red bell pepper, vinegar and mustard.
  3. Fold in lowfat sour cream and add in salt and pepper. Toss gently with cauliflower and peas, adding ham if used. Sprinkle with chives.
