Directions

  1. Cut chicken into thin strips about 2 inches long and set aside.
  2. Blend soy sauce, chicken broth and cornstarch in a small bowl; set aside.
  3. Heat 1 TBSP of oil in a large skillet or wok over high heat. Add chicken.
  4. Stir fry for 3 minutes or until no longer pink. Remove from pan with a slotted spoon. Add remaining 1 TBSP oil. Stir fry garlic, onion, cashews and snow peas for 3 minutes or until tender crisp. Return chicken to pan. Stir broth mixture into pan. Stir fry for 2 minutes or until sauce is clear and chicken is heated through.
  5. Sprinkle with green onion slices. Serve immediately over rice.
