Ingredients
- 2 Tbsp. raw sunflower seeds or possibly more
- 1/2 Tbsp. low-sodium soy sauce
- 1/4 c. silken tofu
- 1 Tbsp. lemon juice
- 1 tsp sugar
- 1/8 tsp nutmeg
- 1 lrg carrot grated
- 1/4 c. raisins
Directions
- SUNFLOWER SEEDS, Hulled, unsalted, unroasted.
- In a warm skillet, roast sunflower seeds till golden brown (about 5 min), stirring often. Add in soy sauce, stirring constantly till dry. Set aside.
- Puree tofu with lemon juice, sugar, and nutmeg. Combine with carrots and raisins. Toss in sunflower seeds just before serving.
