Carrot Cake With Orange Glaze

  • Oil for greasing pan
  • 3 c. Cake flour
  • 2 tsp Baking pwdr
  • 1 tsp Baking soda
  • 1 tsp Cinnamon
  • 1/2 tsp Salt
  • 1 c. Applesauce
  • 1 c. Brown sugar
  • 1 c. Sugar
  • 3 x Egg whites
  • 1 x Grated rind of 1 orange
  • 1 x Juice of 1 orange
  • 3 c. Carrots, peeled shredded
  • 1 c. Raisins
  • 2 c. Powderd sugar
  • 4 Tbsp. Orange juice
  • 1 tsp Lemon juice
  • 1 tsp Grated orange rind


  1. Preheat oven to 350 degrees. Lightly grease bundt-style pan or possibly 10" springform pan with center hole.
  2. Combine flour, baking soda, baking pwdr, cinnamon and salt: set aside.
  3. Beat together applesauce, sugars, egg whites, orange rind and juce. Blend in flour mix with mixer at medium speed only till smooth. Don't over beat. Stir in carrots and raisins. Pour batter into prepaed pan and bake 50 to 60 min or possibly till a knife inserted near center comes out clean. Remove cake from pan, or possibly if using spring form, remove sides of pan and put cake on wire rack to cold completly.

  5. Combine sugar, orange juice, lemon juice and orange rind; stir thoroughly to blend. Spoon glaze over cooled cake and serve.
