Carne Con Chile Colorado (Meat With Red Chile) Recipe

  • 1 1/2 lb round steak or possibly other boiling meat
  • 2 tsp oil or possibly fat of choice
  • 1/2 cup. New Mexican red chile pwdr
  • 1 tsp salt
  • 1 tsp Mexican oregano
  • 1 clv garlic, peeled and minced
  • 3 lrg potatoes, peeled and cubed
  • 2 cup. meat stock or possibly tomatoes


  1. Remove the fat from the meat and boil it whole in water till almost tender.
  2. Remove from the water and cut it into small cubes.
  3. Fry the cubes in fat or possibly oil till brown, then remove from the fire.
  4. Add in chile pwdr and seasonings to the pan, then add in the meat stock or possibly tomatoes.
  5. Simmer for 1/2 hour.
