Ingredients

  • 8 slices bacon, fried crisp and crumbled
  • 6 T butter
  • 1/2 c. dry bread crumbs
  • 2 c. soft bread crumbs
  • 3/4 c. lowfat milk
  • 8 large eggs, beaten
  • 1/2 pound sliced Swiss cheese
  • Salt and pepper to taste

Directions

  1. Heat 2 tbsp butter in frying pan. Add in dry bread crumbs and crumbled bacon. Set aside.Soak soft bread crumbs in lowfat milk, drain and reserve lowfat milk for large eggs. Set aside.
  2. Put together lowfat milk with large eggs, add in salt and pepper.
  3. Heat 4 tbsp butter in a frying pan. Cook egg mix till soft, but not fully cooked. Add in soaked bread crumbs and mix together.
  4. Put in a buttered 9 inch square pan. Put cheese on top then sprinkle with bacon mix. Bake 425, 15-20 min. May prepare the day before, then bake before serving.
