Caribou Steaks With Whisky Sauce

Ingredients

  • 2 Tbsp. Butter, divided
  • 1/4 c. Finely minced shallots
  • 5 x Cranberries,crushed
  • 1/4 c. Scotch whiskey
  • 3/4 c. Orange juice
  • 2 Tbsp. Lemon juice
  • 2 Tbsp. Red currant jelly
  • 1 tsp Dijon mustard
  • 2 tsp Cornstarch
  • 2 Tbsp. Water
  • 4 x Caribou steaks

Directions

  1. Combine 1 tbsp. butter, shallots and berries in a sauce pan. Cook over med. heatuntil shallots soften. Add in Scotch whiskey and heat till just boiling.
  2. Stir inorange juice, lemon juice, jelly and mustard. Heat till boiling. Combine cornstarch with water. Stir into sauce; cook till thickened and set aside.
  3. In a frying pan heat the remaining 1 tbsp. butter and saute/fry the steaks.
  4. Don't overcook. Serve immediately with sauce.
