The Wisconsin State Fair is upon us once again. Over the next few days, I will be posting some great recipes connected to the "Golden Spork" Awards. The Sporkies is a Wisconsin State Fair food competition that started in 2013.

This is my spin on Lulu's Caribbean Crêpes. Think about it...sweet cream cheese spread layered with your favorite tropical fruit. Finished off with a dusting of powdered sugar and drizzled with a chocolate sauce. Perfection!

Ingredients

  • 10 Crêpes, Store Bought or Homemade (Recipe Attached)
  • Cream Cheese Filling:
  • 16 Ozs. Cream Cheese, Softened
  • 1 Cup Granulated Sugar
  • 2 Tsp. Vanilla Extract
  • For Fruit Filling:
  • 2 Tbsp. Unsalted Butter, No Substitutes
  • 1 Cup Fresh Pineapple, Diced
  • 1 Cup Fresh Mango, Diced
  • 1 Cup Fresh Papaya, Diced
  • 1 Large Ripe Kiwi Fruit, Peeled and Diced
  • 2 Tbsp. Granulated Sugar
  • 6 Tbsp. Coconut, Grated (Optional)
  • 1 Cup Fresh Strawberries, Diced (Optional)
  • Garnish:
  • 4 Tbsp. Powdered Sugar
  • 5 Tbsp. Hershey's Dark Chocolate Syrup
  • 1 Ripe Star Fruit, Sliced Thin
  • 1 Small Orange, Cut Into 10 Wedges

Directions

Prepare Crêpes:
1.
If using store bought Crêpes, follow directions on package to prepare.
2.
Otherwise prepare attached recipe.
Prepare Cream Cheese Filling:
1.
Beat cream cheese at medium speed with an electric mixer until creamy.
2.
Gradually add sugar and vanilla, beating well to combine. Set aside.
Prepare Fruit Filling:
1.
Melt butter in a large skillet over medium heat.
2.
Combine in large bowl, pineapple, mango, papaya and kiwi fruit. Gently toss with sugar; add coconut if using.
3.
Add fruit mixture to skillet, cook over medium heat for 2 to 3 minutes, while stirring continuously until slightly thickened. Toss in strawberries if using.
Crêpe Construction:
1.
Place a crêpe on a clean dry surface, spread 2 tablespoons of cream cheese mixture down the middle of crêpe. Add 2 tablespoons of fruit filling and roll it up tightly.
2.
Repeat to make 9 additional crêpes. Placing 2 crêpes on each serving plate.
To Garnish:
1.
Sprinkle crêpes with powdered sugar and drizzle with chocolate syrup.
2.
Serve with sliced star fruit and orange wedges.
