Ingredients

  • 3 x gala apples, sliced
  • 1 x yellow onion, sliced
  • 3 x garlic cloves, minced
  • 2 x shallots, minced
  • 3/4 c. sherry wine vinegar
  • 3/4 c. vegetable stock
  • 2 Tbsp. sugar Healthy pinch of salt and pepper Healthy pinch of fresh thyme, rosemary and parsley

Directions

  1. Start with a pretty warm pan. Throw the first 4 ingredients into the pan, with some extra virgin olive oil. Put the sugar in the pan to start the caramelization process.
  2. When the apples and the onion start turning a nice golden brown color, deglaze the pan with vinegar.
  3. Let simmer for a few min and add in the stock, salt and pepper and the herbs. Simmer till the mix becomes thick. It will become thicker as it stands. Serve with pork, or possibly any other meat.
